Bulgur salad

1.5 cups (9.75 oz) bulgur
2 tsp salt
4 T olive oil
1/3 cup green onion, diced
3/4 cup red bell pepper, diced
1.5 cups cucumber, diced
1/4 cup fresh dill, finely chopped
1/3 cup fresh parsley, chopped
15oz can chickpeas, rinsed and drained
6 T fresh lemon juice
1 garlic clove, finely minced
1/2 tsp freshly ground black pepper

1) Place bulgur in a large heatproof bowl with 1 tsp salt and 2 cups boiling water.  Cover bowl tightly with plastic wrap and let sit until all the water has absorbed, 20-25 mins.

2) Add the remaining 1 tsp salt and all of the remaining ingredients.  Stir, taste for seasonings, and add more salt, pepper, or lemon juice if desired.

3) Chill for 1 hr before serving.
